  • ¼ cup rice, uncooked
  • 1 lb. zucchini, sliced
  • 1 lb.

Method

  1. Spread rice in slow cooker that has been coated with fat-free cooking spray.
  2. Layer in zucchini, yellow squash, onion, and half the basil.
  3. Top with green pepper, celery, and tomatoes.
  4. Combine brown sugar, salt, and pepper. Sprinkle over vegetables. Drizzle with oil.
