  • 2 cups fresh cilantro leaves and stems
  • 2–3 cloves garlic

Method

In a food processor, combine the cilantro, garlic, chiles, and cumin and blitz to break them up. Add the vinegar, orange juice, honey, and salt and pulse once or twice to mix. Then, with the processor running, drizzle in enough oil to achieve the desired consistency. You can leave it a bit chunky or process it until smooth.
