In the summertime we serve this as an accompaniment to grilled meats, but it’s also a simple, refreshing dish to enjoy at the end of the meal, as a Middle Easterner would, or with yogurt at brunch or breakfast. I find the lime isn’t necessary when the fruit is at its peak, but other times of the year it coaxes out a bit more flavor from off-season produce. Extra mint syrup can be stored refrigerated in a covered container for 4 weeks.
