A whole filet of beef is an easy way to make an occasion seem special without a lot of work. The secret is the shawarma spices, which create a crusty, flavorful exterior. Here the meat is roasted at high temperature for a rosy, rare interior, just as we serve it at the store. Need I say that leftovers make a great sandwich?

Ingredients

Shawarma Spice Blend

  • 1 Tbsp ground allspice
  • 1 tsp cayenne
  • 1

Method

To make the shawarma spice blend: Combine all the ingredients in a bowl and mix well.

To make the tenderloin: Put the beef in a large bowl. In a small bowl, combine the oil with 2 Tbsp of the shawarma spices until well blended. (Reserve the remaining shawarma spices for another use.) Rub the spice mixture all over the beef, coating it thoroughly. Cover the bowl and refrige
