Barazek are very traditional cookies, simple and homey, and although they may not be the showiest item in our pastry case, they shine with pure sesame flavor. The surprise crunch of the chopped pistachio hidden underneath always delights me. My dad loves these cookies, so we both enjoyed the process of developing this recipe!

Ingredients

  • 1 cup [220 g] (2 sticks) unsalted butter, at room temperature
  • ½

Method

Put the butter in the bowl of an electric mixer and beat on high speed until fluffy, 2 to 3 minutes. Add the sugar and beat well, scraping down the bowl once or twice, until completely blended. Add the egg and beat until combined.

With the mixer on low, add the flour in three batches, waiting for each addition to be completely incorporated before adding more. Mix until a soft dough form
