Here is another excellent fruit cake, rich with the flavour of that quintessentially English liqueur, sloe gin, combined with the fragrance of rose petals.

Ingredients

  • 225 g / 8 oz / 2 sticks unsalted butter

Method

Line a 1 kg/2 lb loaf tin. Cream the butter and sugar until light and fluffy. Lightly beat the rosewater and eggs, beat them into the butter and sugar mixture and fold in the flour alternately. Stir

I chose this recipe because I had some old sloe gin in the cupboard. While the cake didn't taste of the gin, I assume it added to the flavour. It's a very nice light fruit cake with a hint of rose. A bit different.
