If you bought really fresh fish and a good variety, and if you can be bothered to make some good mayonnaise, tartare or aïoli, and you find yourself in the company of a couple of friends and several litres of iced róse and some good fresh bread - well, all you will need is the sun to shine!

  • 3 lb (1.4 kg) of equally sized fish e.g. red mullet, small bream, large sardines,

Method

Get your spouse to gut, trim and clean the fish. Then wash and dry them. Marinate the fish in the olive oil, juice of 1 lemon, the salt, pepper and herbs. Turn them from time to time and leave them for about 1 hour.
