Put all the ingredients into a bowl and mix very thoroughly and roll into a ball. Divide the ball into four smaller balls of equal size and with the palm of your hand, flatten them to the desired thickness.
Cook the hamburgers over a very hot fire for 10 minutes, turning them frequently. And instead of chips, make a crispy salad of frisée (curly endive) and radicchio with garlic-flavoured croûtons.
