As you’ve guessed by now, grouper is a big favourite in St Pete’s Beach, Florida but, again, this recipe will work for any firm white fish.

Ingredients

  • 3 lb (1.4 kg) grouper or any other firm white fish fillets
  • Juice of 1 lime

Method

Place the fish in a non–metallic dish, pour over the lime juice, add the onions, garlic and a large pinch of pepper, cover and leave to stand for about 30 minutes (a little longer won’t hurt).Then heat the oil in a frying-pan, remove the onions and garlic from the marinade and sauté them in the oil.
