First make the pie filling. Stir together the sugar and egg yolks. Add the milk. Put into a double boiler and bring to the boil. Meanwhile mix the cornflour with a little water, add to the egg mixture and stir until thick. Add the butter, coconut (reserving 1 tablespoon) and vanilla. Pour into the pastry shell and leave to cool.
