Pieces of chicken on the bone are cooked in a spicy spinach and tomato mixture to make a delicious curry.

Ingredients

  • 1 kg/ lb spinach leaves, well washed and drained

Method

  1. Grind together the masala ingredients with a little water to form a paste.
  2. Heat some ghee in a pan and stir-fry the spinach until it is soft and cooked. Pop it into a blender and process to a purée.
  3. In another pan, heat some more ghee and sauté the chicken pieces until they are golden. Season with salt and pepper and put to one side.
