This is a pretty painstaking pudding but well worth the effort. I suggest you do the boring bit - reducing the milk - the day before.

  1. Bring the milk to the boil, lower the heat and simmer until the milk has reduced byhalf. Now, stirring all the time and scraping the thickened milk from the side of the pan, let it reduce and reduce for about an hour until you have a paste-like consistency. At this stage you can refrigerate it until required.
