These are a North African favourite with chicken, lamb and fish, rather like pickled onions with cheese.

Ingredients

  • 12 small lemons or lime (you could use some of each)
  • Plenty of salt
  • 1.8 litres (3

Method

You need 1 large, airtight preserving jar. Make sure it is well washed and sterilised. Give the lemons and limes a good scrub. Cut the lemons or limes almost but not quite into quarters, so that they still hold together at the stem. Sprinkle the cut flesh with salt, then close them.
