  • 1 whole bream, weighing about 900g (2lb), cleaned and scaled — ask your fishmonger to do this for you


Rub the bream both inside and out with some salt. Make four diagonal cuts in the skin on one side of the fish and push a lemon wedge into each slit. Pour over the lemon juice and leave for about 20 minutes, giving you plenty of time to preheat the oven to 180°C/350°F (gas mark 4) and t
