For those of you whose Spanish is as bad as mine, at first glance you might think that this is a soup recipe. Absolutely not so. It is a sturdy vegetable stew much beloved of the Majorcan people. Even though it has no meat its happy mix of vegetable flavours and bread will appeal to the heartiest of trenchermen on a cold winter’s day.

  • 2 large onions, chopped
  • 300ml (½ pint) olive oil

Method

First, fry the onions in about 3 tablespoons of the oil, which you have heated up in a frying pan. When they are golden and soft, transfer them to an extremely large lidded saucepan.
