Ingredients
- 4 eggs, beaten
- 2 or 3 spring onions, trimmed and chopped
- 2 or 3 tomatoes, skinned and deseeded, then cut into quarters
Method
- Heat a wok, add a little oil, then pour in the beaten eggs and cook until beginning to thicken.
- Add the spring onions, tomatoes, ketchup, sugar and salt and continue cooking for 2-3 minutes until the egg has set.
- Sprinkle on the five-spice powder and serve hot garnished with coriander or parsley.
