  • 4 eggs, beaten
  • 2 or 3 spring onions, trimmed and chopped
  • 2 or 3 tomatoes, skinned and deseeded, then cut into quarters


  1. Heat a wok, add a little oil, then pour in the beaten eggs and cook until beginning to thicken.
  2. Add the spring onions, tomatoes, ketchup, sugar and salt and continue cooking for 2-3 minutes until the egg has set.
  3. Sprinkle on the five-spice powder and serve hot garnished with coriander or parsley.
