These come out best using a processor with a wide-mouth feed tube and using the french fry disc. No french fry disc? Use the match-stick method.

Ingredients

  • 4 medium Idaho (russet) potatoes
  • 2 Tbsp olive oil
  • salt and pepper to taste

Method

Preheat oven to 400°F. Line 1 or 2 large rimmed baking sheets with aluminum foil; spray with nonstick spray.

Peel potatoes (or scrub very well). Cut in largest size possible to fit feed tube horizontally.

French Fry Disc: Process potatoes, using medium pressure.
