This is a terrific breakfast or brunch dish. Potatoes go wonderfully with the flavors of chorizo.

Ingredients

  • 3 medium-size boiling potatoes (Red Bliss or other thin-skinned variety; about 1 pound total), peeled and cut into ¼-inch dice

Method

In a medium-size saucepan, bring enough salted water to cover the potatoes to a boil. Drop in the potatoes and cook until almost done but still slightly crunchy, about 5 minutes. Drain and reserve.
