I learned about this spread only fairly recently, when I tried several variations of it in Thessalonica and other parts of Macedonia. Htipiti means “beaten” in Greek, and it probably refers to the process of making the spread in a mortar, which is not always the way it is made today.

Htipiti should not be confused with kopanisti, a crumbled matured cheese spread found in the Greek islands. Kopanisti is made by grating the local cheeses and leaving them in clay o
