Estofado is a basic beef stew cooked with vegetables at a moderately high temperature. Stews are very popular in Chile and this recipe is often eaten on the magical night of San Juan, on 23rd June, when fire festivals mark the summer solstice.

  1. Heat the oil in a large pan over a medium heat. Add the steak and cook for 8 minutes or until browned all over.
