This is a warming dish using a favourite Caribbean ingredient: stout. If you aren’t familiar with dumplings you are in for a treat - they are delicious, and easy to make. You don’t need potatoes or rice with this; just green vegetables! If you’d rather bake the dumplings, add them to the casserole (replacing the lid) for the last 10-15 minutes of cooking time, until they are well risen and cooked through.
