Try this for Sunday lunch and your family will be knocked out. It is one of the tastiest pork dishes ever, I am told, and eating it cold in sandwiches is almost as good.

Ingredients

  • 1 tbsp cumin seeds
  • ½ tbsp black pepper corns
  • 6 garlic

Method

  1. Heat a small, heavy pan over a medium heat. Add the cumin and peppercorns and stir constantly for 2 minutes, or until fragrant and beginning to brown, then cool. Using a mortar and pestle, crush the toasted spices with the garlic, oregano and salt to make a paste. (You can also do this in the bowl of a small food processor.)
