This is one of the essential dishes of Cuba, a staple in every home. The beans are seasoned up with what they call a sofrito, in this case a mixture of onion, garlic, cumin and oregano. It’s certainly one of the most garlicky recipes I’ve done - on the whole I prefer this flavour nice and quiet - but they like it in Cuba and it certainly works well with black beans. Remember to soak the beans the night before you want to eat them. Serve with rice or just with a dollop of soured cream
