Whenever a dish is followed by the term ‘à mineira’, it means that it is from the state of Minas Gerais, and you can be sure it will be simple and hearty food. Here, pork chops are marinated to flavour and tenderize the meat before cooking.

Ingredients

  • 1 large pork chop or loin steak, about 2.5cm/1in thick
  • juice of ½ lime
  • 1

Method

1 Cut deep grooves into the fat on top of the meat, using a sharp knife. Whisk together the lime juice, garlic, olive oil and seasoning in a dish. Add the chop and rub in the marinade.

2 Set the chop aside at room temperature for up to 1 hour to allow the flavours to perme
