There are a number of scallops available in Australia, but for all intents and purposes, they fall into two types: the sea or saucer scallop, wild-caught from the warmer waters of Queensland; and the king or queen scallop, which grows in colder waters. These scallops are wild-caught or farmed. We get our scallops delivered live to Rockpool. This is a real treat, as you can’t imagine the taste of a scallop shucked from the shell still alive and dropped into the mouth – it’s like the most pur
