Roasted Veggie Gnocchi

Method

  1. Cube

    1 eggplant

    1 onion

    2 bell peppers

  2. combine vegetables with 3 cloves minced garlic, 1 T olive oil, ½ t salt, & roast at 425°F, 20-25 min.
  3. cook 16 oz. (455 g) gnocchi according to package instructions (boil about 3 min.)
  4. Mix gnocchi & vegetables with:

    • ½ t garlic powder
    • ½ t red pepper flakes
    • ½ c (50 g) grated Parmesan
    • 3 T olive oil
    • salt & pepper
