Vegetable Dishes

I like to eat tapas style, so I can sample a variety of different dishes. I consider these vegetable dishes main courses, and often serve three or four of them together as a meal. But they could also be treated as sides and served alongside any entrée. Each recipe serves 4 unless otherwise noted.
Rosemary sprigs are used instead of kebab sticks to skewer vegetables. If you have access to a rosemary plant, the stems are usually much thicker and easier to thread vegetables on than store-bought sprigs. It sometimes helps to prepoke holes with a wooden skewer to make threading easier. Also be sure to cut vegetables into large pieces so they don’t split.
