Yellow Squash Galette



Lay a sheet of puff pastry on a greased baking sheet, & top it with the following:

  1. c (85 g) ricotta

    Then 3 T pesto

    Then 2-3 small yellow squash (cut into very thin circles)

  2. Pinch up edges, then drizzle with olive oil & salt
  3. Bake 15-20 min. at 400°F until golden
