  • 1 kg/2 lb 4 oz floury potatoes, such as Desiree, Charlotte or Ratte

Method

Preheat the oven to 200°C/400°F/gas 6. Wash the potatoes thoroughly, put in a large saucepan, cover with water and add a pinch of salt. Bring to the boil, then simmer for 30–40 minutes or until completely cooked through. Drain quickly and place the potatoes on a baking sheet. Put the p
