I discovered this recipe in a cookery book from Nyons in northern Provence. The author, Mireille Lesbros, says that her grandmother used to make this sage-flavored liqueur. Interestingly, this is one of the few recipes that I have come across that includes the beautiful blue sage flowers as well as the aromatic leaves.
Place the sage leaves and flowers in a wide-necked bottle or jar and add the eau-de-vie. Cover and leave in a warm place for eight days then strain into a bottle. Dissolve the sugar in the water over low heat, then bring to the boil. Cool the syrup and add to the eau-de-vie.
Seal the bottle and store in a cool, dark place, or drink immediately. Serve in a small glass as an
