ONE OF THE MOST satisfying ways to serve mushrooms, champignons à la crème makes an excellent first course served simply on a piece of toast, puff pastry, or—more elaborately—in a puff -pastry bouchée (see Puff-Pastry Shells Filled with Seafood in White Wine Sauce). You may also serve them as an accompaniment to sautéed veal or chicken.
