These ‘maiden’ baby lobsters, poached in court bouillon and served simply with their calvados-flavoured bouillon, are one of the finest Norman delicacies. Instead of serving the lobsters with bowls of melted butter, add a little fresh butter to the reduced liquid off the heat. Also, the calvados may be replaced by cognac.
