This classic tart represents, for me, all that I love about the Mediterranean, such as the climate, the colours, the heat, the scents and the goodness of the fresh local and seasonal ingredients. My new additions of tomato confit, chilli and lemon thyme give a freshness and great depth of flavour. You could also top the tarts with a few rocket (arugula) leaves.
