Twice-baked potatoes are the same as regular baked potatoes, but the flesh is removed and mashed with butter and other ingredients as you wish (use your imagination; anything you might put in an omelet will work in a potato), then stuffed back into the skins and baked. These are a great do-ahead style of potato when you’re feeding a lot of people; they also make a satisfying meal for one or two.
