If you have access to excellent arugula, that makes all the difference for this simple salad. Figure on one handful per person.

Ingredients

  • Arugula
  • Extra-virgin olive oil
  • Kosher salt and freshly cracked black pepper
  • Lemon juice
  • Parmigiano-Reggiano (optional

Method

In a large bowl, drizzle the arugula lightly with oil, tossing it to coat. (This can be done up to a half hour before you wish to serve the salad.) Sprinkle the greens with salt. Squeeze lemon over the greens, being careful to catch any seeds. Taste the salad. Add more lemon or oil as needed.
