If you have access to excellent arugula, that makes all the difference for this simple salad. Figure on one handful per person.
In a large bowl, drizzle the arugula lightly with oil, tossing it to coat. (This can be done up to a half hour before you wish to serve the salad.) Sprinkle the greens with salt.
