The brilliant food writer Claire Macdonald (the wife of Godfrey, the Lord of the Isles) discovered there is an enzyme in beets that breaks down the fibers in venison. When I was staying at Kinloch Lodge, the blissful hotel on Skye in Scotland, she told me it would tenderize even the toughest old stag.
