The Swedes eat a large quantity of game, and they cull 100,000 elk (moose) each year, all of which are consumed within the country. Flank steaks are a neglected cut from most beasts and they taste very good; it is a cut I tend to use for Stroganoff recipes. Here is a simple but yummy way of preparing flank. Serve with whatever roast vegetables you wish, I have used parsnips and baby turnips.
