In the days of the Regency, salmon and sea trout were still very common but cucumbers less so. Here is a delicate dish which preserves the flavor of the sea trout.

Ingredients

  • 1 onion, thinly sliced
  • ½ cup (1 stick) butter
  • 3

Method

Preheat the oven to 400°F.

Butter an ovenproof dish and scatter the onion on the bottom of it. Smear the sea trout with half the butter, season well with salt and pepper, and place on the onion. Chop the dill and add to the cream, mix in the water, and pour it over the fish. Co
