  1. Follow the Procedure for Making Vegetable or Fruit Coulis. Blanch and refresh the tomatoes to remove the skins.
  2. Flavor the coulis with the juices of the garlic and shallot, pressed through a garlic press.
  3. Whisk in the olive oil.
