  1. Bring 2 qt (2 L) water to the boil.
  2. Remove any tough or discolored outer leaves of the cabbage.
  3. Quarter the cabbage lengthwise and cut out the core.
  4. Cut the cabbage across the grain into very fine shreds.
  5. Place the cabbage in a colander and pour the boiling water
