Preparation

  1. Roast the beets as instructed.
  2. Cool, peel, and cut into thin wedges.
  3. Toss the beets with 3 fl oz (90 mL) of the vinaigrette.
  4. Taste and add some sugar if necessary.
  5. Allow the beets to mellow at room temperature 1 hour.
