Day 1 Preparation

  1. Juice the ginger in a juice extractor or by forcing it through a garlic press.
  2. Combine the ginger juice and pulp, scallions, sugar, soy sauce, and sesame oil to make a marinade.
  3. Coat the tuna steaks with the marinade and refrigerate them for 24 hours (A).
