Minestrone Freddo al Pesto

Plating

1. Stir the minestrone well to distribute the vegetables in the broth. Ladle the minestrone into a cool 10-in. (25-cm) soup plate.
2. Place the soup in a microwave oven and heat it for a few seconds only, just to bring it to room temperature.
3. Spoon the pesto into the center of the soup.
