Plating

  1. Place the lettuce leaf on a cool 12-in. (30-cm) oval plate.
  2. Fill the lemon basket with the crème fraîche and place it on the back center of the plate.
  3. Fan 3 croûtons on either side of the lemon basket.
  4. Arrange the smoked salmon in a ruffle across the front of the plate.
