Day 1: Preparation

  1. Wipe the fresh mushrooms clean with a damp towel. Slice the mushrooms paper-thin on a mandoline or with the fine slicing blade of a food processor.
  2. Combine the sliced fresh mushrooms with the salt in a nonreactive container. Cover and refrigerate 24 hours.
  3. Rinse the dried mus
