Day 1: Preparation
- Core the tomatoes and cut them in half lengthwise.
- Place the tomatoes on a sheet tray, cut surfaces up, and sprinkle them generously with salt. Let stand at cool room temperature 1 hour.
- Line another sheet tray with paper towels and place the tomatoes on it, cut surfaces down
