  1. Scrub the cucumbers thoroughly and trim the ends. Cut the cucumbers in half lengthwise and scrape out the seeds. Cut the cucumbers into 1-in. (3-cm) chunks.
  2. Place the cucumbers in a blender with a little salt. Blend to a purée.
  3. Strain the purée through a double layer of dampened che
