Sometimes it takes just a little heat to transform an ingredient, like dates, which go from being stiff and fudgy to luscious and aromatic with a little gentle heating. Salty sheep’s milk Manchego is the perfect counterpart.

Ingredients

  • 2 tablespoons olive oil, plus a bit more to drizzle
  • 12 ounces (340 g) Medjool d

Method

Pour the olive oil into a large, heavy skillet and place over medium heat. Add the dates, watch carefully, and turn each date after it has plumped and turned a bit rusty in color, about 90 seconds. Cook the second side of each date, about 45 seconds. Turn the pan off, and remove the dates from the pan. Watch out: All that sugar makes them burn easily.

Place the dates on a serving plate
