I know there are a lot of tomato recipes in this section, but this is the truth about how I eat. When it’s summer and I can get great, locally grown tomatoes (sometimes from my own backyard!) I eat them all the time, and in great quantity. In November, after I have pickled my last green tomato, that’s it. I don’t really eat any fresh tomatoes until the next summer. Of course I’ll use plenty of canned, dried, and even the occasional frozen tomato in my cooking.
