Soft-boiled eggs with toast soldiers

The very precise way in which we cook our boiled eggs sums up our attitude to food: they have to be perfect every time. Tonia’s mum, who used to keep chickens, came up with this great way of cooking perfect boiled eggs. Instead of doing them at a rolling boil, which can make them tough, she rests them in hot water, which coaxes them into a creamy set white with a molten golden yolk. Topped with little woolly ha
